Polish dumplings with mushrooms (pierogi)

Try this traditional Polish recipe for dumplings with mushrooms (pierogi). This is one of the best recognized, traditional dishes in Poland.


Ingredients:

Dried mushrooms - approx. 200g
3 eggs
2 onions
salt, pepper, salt, ,
dough:
flour - approx. 2 cups
water - approx. 3/4 cup
1-2 tablespoons of oil


Instructions: 
 1. Soak dried mushrooms in water for 2-3 hours. Then boil (preferably in the same, salted water) for about 30-40 minutes. In the meantime, cook eggs (for around 10 minutes) and fry the onion.. Drain the water off the mushrooms and leave them for some time to cool down. Mince musrhooms together with eggs in order to create a mass as in the picture. Next, add the minced mushrooms with eggs to the onion browned earlier. Cook for another 10 minutes.
 
2. Prepare the dough for the dumplings. You will need a pastry board, roller, and a lot of strength :)


 
3. Knead the flour with warm water and oil. Knead the dough until it creates smooth and homogenous mass.

 
4. Sprinkle the pastry board with some flour. Roll out the kneaded pierogi dough until it creates a thin layer of approximately 2 millimeters.
5. Cut out circles from the dough using a glass. These later will be used for forming dumplings.

 6.Place the stuffing in the circles of dough and form the dumplings, squeezing them with your fingers on the edges.
6. Put the dumplings into boiling salted water and cook for approx. 5-6 minutes.
