Carrot cake with raisins and nuts

Carrot cake with raisins and nuts is a great healthy cake recipe that you may try. Carrot adds nice moisture to the cake and melts in your mouth. Mascarpone cheese will add nice creamy flavor on top of the cake.



Ingredients:

4 eggs
1 cup sugar
2.5 cups cake flour
1 cup oil
4 medium carrots grated on the large mesh
sweetmeats (approx. 30 grams - can be a mixture of raisins, nuts, dry fruit)
teaspoon of cinnamon
teaspoon of baking powder
2 level teaspoons of baking soda
  freshly squeezed orange juice
400 ml of cream 36%
1 mascarpone cheese (25 grams)
4 tablespoons granulated sugar
1 teaspoon of gelatin (alternative)
tablespoon of cocoa


Instructions for the cake: 
1. Mix the eggs with the sugar, then gradually pour the oil and mix on. Next, add the flour, cinnamon, baking powder and baking soda. Mix well.
2. Add the earlier grated carrots (on a coarse mesh), dried fruit, raisins and nuts and mix thoroughly.
3. Preheat the oven to 170-180 degrees. Pour batter into the springform pan and bake for about 50 minutes.
4. Meanwhile, prepare the cream that will go on top of the cake. Whip the cream and add 4 tablespoons of granulated sugar close to the end. Add also mascarpone cheese and (if you wish) a teaspoon of gelatin dissolved in a small amount of hot water.
Leave it in the fridge for some time.
5. Take the cake from the oven and let it cool down. Pour orange juice over the cake. When the carrot cake is cook, spread the earlier prepared mascarpone cream and sprinkle it with cocoa. Put the cake in the fridge for a few hours until the cream is solidified.
